Waves of Chinese immigrants arrived in Quevedo across the twentieth century, many originally drawn to the coast as laborers, and they stayed, married, opened restaurants, and built a community that changed the character of a provincial trading town. Walk the streets today and you will count more chifa signs than you can keep track of. Some are excellent. Some are terrible. Most are somewhere in between, serving the same combination of stir-fried noodles and fried rice that a Cantonese cook would have brought ashore a century ago, filtered through Ecuadorian ingredients and local tastes. This is not a city built for tourists, and that is exactly the point.
